Professional Background: 

Seok Lee is the research scientist with Solae, LLC, food ingredient company. Solae produces isolated soy proteins, functional soy protein concentrates, textured soy proteins and lecithin utilized in a variety of food products. Lee serves in the meat application group providing technical support to customers globally, and develops new food concepts. Lee has over 15 year research experience in beef tenderness, pork quality and meat color chemistry including terms as visiting scientist at the University of Wisconsin-Madison, and research scientist at the University of Connecticut. Lee received his BS in Animal Science, and MS and PhD in Meat Science from Korea University, Seoul, Korea.
